Alright!! So, this is my almost paleo turkey cobb burger. The Cobb is usually a salad incorporating romaine lettuce, bacon, blue cheese, and turkey. The Turkey Cobb Burger, a burger variation is featured a few menus, and is one of my favorites. But, it presents some problems to the paleo diet; bacon, blue cheese, mayo, and bread(in the burger form). I set out to solve this problem. 
To make to almost paleo Cobb Burger you need;
1tsb black pepper
1 clove garlic
1 1/2 pounds ground Turkey
Romaine lettuce
1 White Onion
1 Tomato
2 Avocado
4 Large Portabella
Bacon Bits (optional)
Paleo Mayo
Prep:
Take your ground turkey (thawed if frozen) and place it in a bowl. Add, 1tsb fresh ground black pepper. Mince your clove of garlic and add to bowl as well. At this point you can add an egg as well, this helps the meat stick together in patties. I did not use an egg when I made this particular burger, but you may. Fold meat and spices until blended well, and make into 4 patties. Set the patties aside and prep the veggies. Take your white onion and slice it along the sides of the onion, so that it creates the rings of onion inside each other. This will create the base your burger will sit on. Peel, pit, and slice your avocado. Slice your tomatoes. For the portabellas pull the stems away gently, to preserve the caps. These will be the tops of your burger. I save the stems to throw in stews or chop up an use in salads. Ok, now for the optional, almost paleo, part. Take your pan and heat a small amount of olive oil, about 1-1 1/2tbs. Add, about 1/2-1tbs of bacon bits to the pan, and sit your onion bases in the pan. Sear onion bases in bacon bits and oil. Remove from pan and sit in warm place. Now take your patties and cook. Remove, place onion bases on plates, place burgers on top, add your tomatoes, avocados, and romaine lettuce. Finally, take your portabella caps, smear a little paleo mayo (http://paleodietlifestyle.com/paleo-mayonnaise/)( and remember that on the original paleo diet that mustard is a no-no. And, the same goes for the bacon variation of paleo mayo.) on the bottom side of the cap, top, and enjoy!
