Hungry and Running Low on money?
So when I am running super low on cash and can’t afford to buy a ton of paleo-friendly food…this always works for a quick and easy lunch!
I like to call it Spicy Chicken Veggie Scramble
Simply buy a bag of frozen veggies. I personally like a particular blend of pepper and onions. So throw the veggies in a pan with some olive oil or coconut oil. Season with:
Chipotle Chili Powder
Black pepper
Garlic Powder (or fresh if you prefer)
Cayenne Pepper
When the veggies are seasoned and cooked…throw a small container of canned chicken (in water) into the pan and stir fry together. Finally, put over some leafy spinach in a bowl…and voila! Cheap, easy, and practically paleo.
*canned chicken and tuna have added salt which is their only downfall, however you can get it closer to paleo by getting the kind “in water” as opposed to “in oil.”
It’s seriously tasty! And you can always season it to your liking if you don’t like things spicy :)
